When caterer Kate Raymont heard that the Council wanted her to cook dinner for a crowd of up to 250 people she thought, ‘That’s going to be a challenge.’
Then she learned that she had to source the majority of the ingredients for the FEAST Celebration Dinner from within the Scenic Rim.
Call it a challenge on steroids. Then she discovered that the venue didn’t have a commercial kitchen. Many would understand if at this point Kate said, ‘thanks but no thanks.’
But she didn’t. Kate, of Canungra catering company Hinterland Harvest, loves a challenge, nearly as much as she loves championing the benefits of eating local.
She admits the FEAST celebration dinner at Aratula on June 30 will be the biggest test of her skill yet, but she’s ready for the task.
“Logistically, it has been difficult,” she says. “Trying to find everything to fit into the menu has been challenging, but it’s going to be really worthwhile. It’s important to show everyone the diversity of produce that we have in the region. It’s going to be amazing, people are going to say, ‘Wow I didn’t know we had this produce in the region.
